I eyeball everything:

browned spicy turkey sausage
2 cans diced tomatoes w/ green chilis
2 cans mild chili beans
onion
garlic
green pepper
diced jalapeños
cilantro
cumin
chili powder
brown sugar

serve w/ sour cream and I like to crunch up tortilla ships to throw in there.

Great! But where do us lesser cooks start from on the amount of each ingredient?

I eyeball everything too with most recipes.  I've noticed that, at least for me, my taste for things isn't the same every time. Especially when adding heat.

1 Tablespoon for everything but salt, pepper, and spicy and sweet, adjust from there is my rule. But I'm no chef, that's just what has worked for me.

@Drroogh that rule is for a full batch of chili, which for me fills up a 10 quart Dutch oven. If you make a smaller batch cut that down to 1/2 Tablespoon.

Fixed, but estimated.

So a few years back, I found a copycat recipe for Toledo style hotdog chili sauce and was aware of the restaurant. Since moving just 25 minutes from Toledo I started noticing their products in the grocery stores.
Today I made a pot of this

per directions. I think my days of making scratch chili are over. Seems they have their products available retail all across the country.

By the way, their hot dog chili is pretty darn good as well.
