IUFLA Posted June 23, 2019 Report Share Posted June 23, 2019 I guess this is the proper thread to talk about sauces as well... I've never tried making homemade BBQ sauce. Always used bottled. Here are a few favorites... The go-to I've eaten at Corky's original restaurant in Memphis, and although I think the meat at The Rendezvous is better, Corky's sauce is the best. I mix the regular and the hot about 50/50. They run online sales sometimes. Had a case (12 bottles, mix and match) for $20 and free shipping not long ago. My pantry looks like a Corky's retail store. This mustard based sauce is from Maurice Bessinger's "Piggy Park" restaurant in Charleston, SC. Different, but I like it for a change with pork. Big Bob Gibson's (no, not THAT Bob Gibson's) in Decatur, AL has a very different white BBQ sauce. I don't like painting this one on, but rather for dipping. Especially chicken. Start with ketchup, 1 cup, add horseradish until you just barely taste it, 3-5 tbsp., add lemon juice until you just barely taste it, 5tbsp, or it no longer tastes like ketchup. Now that you have the proper Tang add either honey or agave to taste, approximately 3Tbsp. Adding red pepper or my go to, chipotle pepper works if you want something spicier. I had it a reasonable distance from my house and deck. When everything was just right the wife and I decided to go for a run. About 20 mins later, about a mile away from home, a firetruck lights up and is going in the direction of my house. I have never cleared a mile so fast in my life. She was already lagging behind but I left her so far behind I had to go pick her up in the truck. Amazing what adrenaline does. Everything was fine and firetruck was responding to an accident. When my son was a teenager. And he left a friend of his late at night. But with two others in his car, that he was going to take them home. Came past a house that was on fire. They all jumped into action. My son told the male friend to get the house hose and start putting the fire out. He told he girl , to get on her phone to call 911. And my son broke the front door down to wake the family of five up. Who had no idea their house was on fire. Escorted the family out side. While the fire was getting extinguished. By the time the fire department arrived. And it was quick. The fire was put out. And when the fire fighters got there. Which did not take long. One of the fire fighters told them...." Next time, leave something for us to do." LOL A few weeks later, the fire department honored my son with a life saving ceremony and certificate. Going to do a few normal corn (boiling salted water for 8 minutes) but going to throw some on the grill as well. Food wise this is Christmas morning for me.
