Those sound like good options. Most I ever cooked for was probably 30-40 and we made jambalaya. When I think good/filling and easy on the pocket book I think of rice,beans,and potatoes. Inexpensive good foundational foods that can be used multiple ways. Also foods that provide leftovers. Chili is always a good option for a group. Red beans and rice. Stuffed peppers. Potato soup. Vegetable soup over rice. Really any soup or stew. Those were born out of cheap and hearty. Tuna noodle casserole, chicken and rice, beef stroganoff are a few that would highlight Campbell's cream of mushroom/chicken condensed soup bases. Baked potatoes can take on a large variety of toppings.

I helped my uncle once hang drywall on 12ft ceilings. That was a chore. When I moved in my house I remodeled a room that still had plaster walls. When I took the plaster down I saw they had hung drywall on the ceiling. I left that alone and did the walls. Ended up with a 1/4 inch gap between the wall and ceiling panels. Said to heck with it and inverted corner protectors to fill the gap and let joint compound hide my handi work.

@Naturalhoosier looks good. I like doing the joint work with drywall. Did you hang the ceiling first?
